Let's face it, Fifa 21 is still in a fullback meta. Yes, TOTS has, and will, bring us some more amazing and viable CB options. But as it stands, fullbacks are still extremely viable as centerbacks no matter the formation.
So let's look at Luke Shaw. A full back with 91 pace, 89 defending, and 88 physicality. Perfect stats for the fullback rats. Add to that his stocky body type and you have on paper an amazing centerback in game. And guess what, he is! Could be the best defender I've used so far.
Got him in my red picks, thinking EA shafted me again by not giving me Cancelo or Ruben Dias, and I missed out on AWB the week before. Turns out, they've blessed me with the perfect meta CB. His on-pitch performance is as good if not better than Moments Zambrotta. Positional sense, tackling, and strength are all top tier. He also makes the tackle when you tell him, and he knows just when to automatically step in without fouling. His sliding tackles always seem to just work. When Pressing after Possession Loss, he can step up and intercept passes that would otherwise lead through to goal. Even when not controlling him, he knows where to slip in when the defense gets all jumbled up. His dribbling is quite nice but he's like a tank (great for shielding, but bad for moving ball forward). His passing is great; can definitely get the ball out of the defense and start counter attacks.
The few cons I have with him is his height, not the best at winning headers. He also has shorter legs than than most CB's so he can't make miracle tackles from 5 feet away. The best comparison I can make is Moments Zambrotta, where defensively they are perform very similar but Shaw is much stronger and better at shrugging of attackers while Zambrotta is better on the ball.
Also, during my time with him I've never played him as a full back at his natural position and I don't really have a need to do so. His on-ball ability and feel have never made me confident enough that he'd perform better out wide than as a centerback.
TOTS Ruben Dias is currently 340k and Shaw is at 200k. I don't think the 140k premium is worth it. It sucks that fullbacks offchem can be abused as centerbacks, but that's Fifa 21, and honestly I'd happily take 200k shaw and save myself140k over Ruben Dias.
Shaw came into my backline as a much-needed replacement as my old CBs were getting too slow to catch up with mbappe's and new tots players. Shaw was an excellent replacement and excels at Interceptions and has a perfect tackle animation to avoid annoying bounce backs, deflections. He's trusty enough to shield the ball well when being heavily pressed and can distribute the ball forward well, he's quick enough to keep up with 97 or fewer pace players for about 75-85 minutes (depending on personal playstyle). His AI interceptions are incredible and automatic tackles always come off perfectly executed without giving away pens. Overall he's a great option at CB if you don't have the coins for a Ruben Dias or Cancelo and is 100% worth the coins.
P.S would recommend starting from LB and move to CB in-game for the 99 pace

I packed him untradeable a few weeks ago, and he is as expected, very solid. He is fast, strong and agile, so got all the stats than LB needs. I can recommend you him, beacuse he is worth the coins and really good. Anchor.
Luke Shaw offers an excellent balance between cost and benefit. He can play as a left back (without going up to attack) giving you a good defensive solidity.You can also play central defense taking advantage of its advantages such as height and agility to be able to defend yourself from the agile forwards that everyone uses today.
The performance I have with this player reminds me of that of Zambrotta.
A great value player and one of the LBs players with the best performance.
